I am looking to print something that is basically a collection of nodes and edges but need the supports that print to be soluble so that we can remove them without damaging the rest of the structure. Any guidance on what type of printer/material makes the most sense? I understand that i need a dual head printer to be able to print the two materials at once…

It sounds like you want to use a 3D printer that has the HIPS filament available. If you go to the advanced options of searching for a 3D printer you can select material type. Once there you can select the material HIPS. You may have to up the distance limit and add hubs that can ship. HIPS is the material often used with dual extruders for support that is dissolvable. Once you find a hub i would send them an enquiry first asking about your project and making sure they have a dual extruder. This should get you started in the right direction, let me know if you need more help.
I understand there are dissolvable filaments but I have never used to them. I usually print the model on ABS and supports on PLA, boil the model a little and because pla softens at lower temperatures it comes out very easily.
